This is a simple breakfast dish that is very filling and it should get you halfway trough the day before you feel hungry again.

Ingredients:

  • 1 medium onion, diced
  • 1 green pepper, diced
  • 1 tin baked beans in tomato sauce
  • 4 eggs
  • 4 slices of toast
  • olive oil
  • salt and pepper to taste
  • dash of paprika and cayenne pepper

Method:

  1. Fry the onion and green pepper in a glug of olive oil until soft
  2. Add the baked beans and cook for another 5 minutes
  3. Add the seasoning and spices
  4. Make 4 welts in the bean mix and break an egg into each one
  5. Cook with a lid on until the eggs are set
  6. Serve on toast making sure that each person gets an egg

Serves 4

Halve the dish if you are going to make it only for 2 people. Omit the cayenne pepper if you don’t like your food too hot and spicey
