Bean and Egg Breakfast
by adminThis is a simple breakfast dish that is very filling and it should get you halfway trough the day before you feel hungry again.
Ingredients:
- 1 medium onion, diced
- 1 green pepper, diced
- 1 tin baked beans in tomato sauce
- 4 eggs
- 4 slices of toast
- olive oil
- salt and pepper to taste
- dash of paprika and cayenne pepper
Method:
- Fry the onion and green pepper in a glug of olive oil until soft
- Add the baked beans and cook for another 5 minutes
- Add the seasoning and spices
- Make 4 welts in the bean mix and break an egg into each one
- Cook with a lid on until the eggs are set
- Serve on toast making sure that each person gets an egg
Serves 4
Halve the dish if you are going to make it only for 2 people. Omit the cayenne pepper if you don’t like your food too hot and spicey
