Candied Carrots
by adminI just love this recipe and it is so quick and easy to make. Candied carrots go well with just about any dish.
Ingredients
- 6-8 baby carrots – if you don’t have fresh baby carrots just use whatever carrots you have, peeled and diced into 2cm pieces
- 1/4 cup brown sugar
- 1/2 lemon
- 2 tablespoons butter or Flora margarine
- pinch of salt
Method
- Boil the carrots in just a dash (about 50mls) water with the lid on for 10 – 15 minutes – you don’t want it to cook to a mush. If the water boils away, replace with a few drops.
- When the carrots are ready, pour off any remaining water and add the brown sugar, juice of the lemon and the butter.
- Cook on medium heat until the the carrots are bubbling nicely in the sugar mix – about 20 minutes
Serves 2
