Candied Carrots

I just love this recipe and it is so quick and easy to make. Candied carrots go well with just about any dish.

Ingredients

  • 6-8 baby carrots – if you don’t have fresh baby carrots just use whatever carrots you have, peeled and diced into 2cm pieces
  • 1/4 cup brown sugar
  • 1/2 lemon
  • 2 tablespoons butter or Flora margarine
  • pinch of salt

Method

  1. Boil the carrots in just a dash (about 50mls) water with the lid on for 10 – 15 minutes – you don’t want it to cook to a mush. If the water boils away, replace with a few drops.
  2. When the carrots are ready, pour off any remaining water and add the brown sugar, juice of the lemon and the butter.
  3. Cook on medium heat until the the carrots are bubbling nicely in the sugar mix – about 20 minutes

Serves 2
