Cauliflower Mash

This is a good replacement for mash potatoes when you want something less starchy and it is catching on fast as a replacement for mash potatoes.

Ingredients

  • 1/2 head of cauliflower, washed and roughly chopped
  • 1 clove of garlic
  • 50ml greek yoghurt
  • 100ml water
  • salt and pepper to taste

Method:

  1. Put all the ingredients in a pot and bring it to the boil.
  2. Once the cauliflower is cooked but still a bit crispy about 10 minutes, remove it from the stove and drain any water
  3. Add the yoghurt to it and mash it roughly with a fork
  4. Serve warm

Serves 2

As a variant to this recipe, you can omit the yoghurt and grate parmesan or any hard cheese into the cauliflower.
