This is a good replacement for mash potatoes when you want something less starchy and it is catching on fast as a replacement for mash potatoes.
- 1/2 head of cauliflower, washed and roughly chopped
- 1 clove of garlic
- 50ml greek yoghurt
- 100ml water
- salt and pepper to taste
- Put all the ingredients in a pot and bring it to the boil.
- Once the cauliflower is cooked but still a bit crispy about 10 minutes, remove it from the stove and drain any water
- Add the yoghurt to it and mash it roughly with a fork
- Serve warm
As a variant to this recipe, you can omit the yoghurt and grate parmesan or any hard cheese into the cauliflower.Did you like this? If so, please bookmark it, RSS feed.
