Quick and easy!
Ingredients:
- 4 medium or 2 large potatoes rinsed
- 1/2 head broccoli cut into bite-sized pieces
- 1/2 head cauliflower cut into bite-sized pieces
- 1/2 tub sour cream or cream cheese
- 1 cup grated cheddar cheese
- sea salt and black pepper to taste
Method:
- Preheat the oven to 200 degrees Celsius
- Bake the potatoes in the oven for 25 – 30 minutes or until soft inside, then remove from the oven and turn the oven down to 180 degrees
- While the potatoes are baking, parboil the broccoli and cauliflower in 50ml water for about 10 minutes until cooked but still crisp
- Once the potatoes are done, let them stand for a bit until they have cooled down a bit
- Cut the potatoes in half and scoop out the flesh into a mixing bowl
- Mix all the other ingredients with the potato flesh and scoop back into the potato shells
- Put back in the oven and bake for another 20 minutes until golden brown
Serves 2
Serve hot with a leafy green salad on the side.
