Crunchy Roasted Cauliflower
by adminRoasting cauliflower in the oven brings out a nutty taste in them that is absolutely yummy.
Ingredients
- 1/2 medium head of cauliflower cut into chunks
- 1/2 lemon
- olive oil
- balsamic vinegar – I like using the white one as it does not discolour the vegetables
Method
- Preheat the oven to 200 degrees Celcius
- Place the cauliflower into an oven dish and drizzle with juice of the lemon and a good glug of olive oil
- Roast in the oven for 20 – 30 minutes or until it is nicely browned. Turn it around at least once during this cooking time
- To bring out the flavour, drizzle with a bit of balsamic vinegar before serving
Serves 2
Serve with candied carrots and marinated white mushrooms for a complete meal
