Roasting cauliflower in the oven brings out a nutty taste in them that is absolutely yummy.

Ingredients

  • 1/2 medium head of cauliflower cut into chunks
  • 1/2 lemon
  • olive oil
  • balsamic vinegar – I like using the white one as it does not discolour the vegetables

Method

  1. Preheat the oven to 200 degrees Celcius
  2. Place the cauliflower into an oven dish and drizzle with juice of the lemon and a good glug of olive oil
  3. Roast in the oven for 20 – 30 minutes or until it is nicely browned. Turn it around at least once during this cooking time
  4. To bring out the flavour, drizzle with a bit of balsamic vinegar before serving

Serves 2

Serve with candied carrots and marinated white mushrooms for a complete meal
