Curried Carrots
by adminThis makes a great side dish and is very simple to make.
Ingredients:
- 3 medium carrots peeled and diced
- 1/2 onion diced
- 1 medium tomato diced
- 1 tbs curry powder
- rock sea salt and black pepper to taste
- 100 ml water
Method:
- Place the carrots and onion in a pot with the water and bring to the boil. Once it has boiled, turn the stove down to medium low heat.
- Cook the carrots and onion for about 20 -25 minutes or until soft
- If the water dries out in the meantime, refill with about 50 ml water
- Once the carrots and onion is cooked, add the tomato, curry powder and salt and pepper and cook for another 10 minutes or until the tomato is soft
- Once everything is done, add a dash of butter to it and mash everything together
- Serve hot
Serves 2
The reason I cook my vegetables in so little water is that I don’t want to lose the nutrition from the veggies which normally happens when one has to drain excess water. This way the food is much healthier and a lot tastier too.
