Curried Carrots

This makes a great side dish and is very simple to make.

Ingredients:

  • 3 medium carrots peeled and diced
  • 1/2 onion diced
  • 1 medium tomato diced
  • 1 tbs curry powder
  • rock sea salt and black pepper to taste
  • 100 ml water

Method:

  1. Place the carrots and onion in a pot with the water and bring to the boil. Once it has boiled, turn the stove down to medium low heat.
  2. Cook the carrots and onion for about 20 -25 minutes or until soft
  3. If the water dries out in the meantime, refill with about 50 ml water
  4. Once the carrots and onion is cooked, add the tomato, curry powder and salt and pepper and cook for another 10 minutes or until the tomato is soft
  5. Once everything is done, add a dash of butter to it and mash everything together
  6. Serve hot

Serves 2

The reason I cook my vegetables in so little water is that I don’t want to lose the nutrition from the veggies which normally happens when one has to drain excess water. This way the food is much healthier and a lot tastier too.
