This is soul food :)

Ingredients:

  • 1/3 packet macaroni
  • 1 small head of cauliflower cut into small bite-size pieces
  • 1/2 punnet mushrooms roughly chopped
  • 1 onion diced
  • 50ml butter
  • 2 cups milk
  • 250ml grated cheese
  • 100ml extra grated cheese for topping
  • 50g flour
  • sea salt and black pepper to taste
  • a sprinkle of nutmeg

Method

  1. Preheat the oven to 180 degrees Celsius
  2. Cook the pasta according to instructions, drain and set aside
  3. Lightly saute the onion till see through, then add the mushrooms and cauliflower and cook for another 5 minutes or until the cauliflower is almost cooked but still crisp
  4. Melt the butter in a saucepan, and add the flour stirring until it is well mixed
  5. Slowly add the milk to the saucepan stirring continuously to prevent lumps, until it forms a smooth sauce
  6. Add the cheese and seasoning, stir until the cheese has melted
  7. Toss the vegetables and pasta in the white sauce and spoon into an over proof dish
  8. Sprinkle the extra cheese over before putting the dish in the oven, as well as the nutmeg
  9. Bake for about 35 minutes until golden

Serves 2

Serve with a nice leafy green salad and tomatoes
