This is a very refreshing salad on a hot day even though it has chilli in it. It is a good variation on the plain old carrot salad.

Ingredients:

• 4 carrots grated
• 1/4 onion finely chopped
• 1/2 bag of rocket leaves
• 1/4 round feta cheese crumbled
• 2 cloves of garlic minced
• juice of 1/2 lemon
• 2 tablespoons olive oil
• 2 teaspoons brown sugar
• 1/4 teaspoon red chilli flakes (optional)
• sea salt and black pepper
• 2 teaspoons parsley finely chopped

Method:

1. Mix all the vegetables together excepting the rocket leaves.
2. Mix the lemon juice, seasoning, herbs, brown sugar and olive oil together in a little bowl
3. Pour the dressing over the vegetables and mix thoroughly
4. Serve on the rocket leaves as a side salad and scatter the feta cheese over each portion
