Griddle Cakes
by adminThis is a very yummy bread that you grill on a braai griddle. It heavenly with a dash of butter and syrup!
Ingredients:
- 2 cups white flour – you can use cake flour or bread flour – I prefer the taste of the bread flour
- 1 packet instant yeast
- 50ml oil
- 1tbs sugar
- 1/4 teaspoon salt
- 200ml luke warm water
- oil to knead the dough
Method:
- Mix the flour, sugar, salt and yeast together
- Make a well in the middle of the flour, and pour the water and the 50ml oil in it
- Use some extra oil to oil your hands before kneading the dough so that it does not stick to your fingers. If it is too dry, add some more water, if it is too sticky, add some more flour
- Knead for about 10 minute until it is quite elastic
- Place in a large glass bowl and cover with clingwrap
- Leave it to stand until it has doubled in size – about 1 hour on a hot day
- Knead it down using some oil on your hands once again, and divide it into tennis ball sized chunks
- Flatten the chunks until into 1 cm wide squares – don’t make them too thin otherwise it will not cook properly
- Cook on an open fire when the fire is ready or grill it in your griddle pan on the stove
Makes about 6 griddle cakes. Lather them with butter and honey and enjoy, or Serve with a nice green salad. It is like eating your own fresh, home made bread.
As a matter of fact you could use this recipe to create a bread. Just put it in a bread tin to rise instead of in bowl, then back at 180 degrees Celsius until nice and golden brown – approximately 40 minutes. Insert a skewer into the bread to check it is done – if it sticks to the skewer leave it in for another 10 minutes or so.
You can also use this dough to make delicious vetkoek. Just flatten balls of dough and cook it in medium hot oil until golden brown and done.
