Lentil & Soya Cottage Pie

Ingredients:
- 1 cup lentils soaked overnight, drained
- 1 cup re-hydrated soya mince, drained
- 1 onion diced
- 3 carrots grated – if you like your carrots less earthy tasting peel them before grating
- 4 medium potatoes peeled and diced
- 2tbs butter or margarine
- 1 tbs soy sauce
- 1 tsp curry
- 1 tbs chutney
- 50ml milk
- olive oil
- sea salt and black pepper to taste
Method:
- Preheat the oven to 180 degrees Celsius
- Boil the potatoes until soft in about 50 ml water
- Mash the potatoes together with the milk and butter, add salt to taste
- While the potatoes are boiling, lightly saute the onions in a little bit of olive oil – about 5 minutes
- Add the re-hydrated soy mince to the onions and cook until they don’t give off any more water
- Add the carrots and stir fry for another 5 minutes
- Lastly add the lentils, cook for another 5 minutes then add the curry powder, soy sauce, and chutney
- Cook a few more minutes and add salt and pepper to taste
- Turn the soy mince mixture out into an oven dish and top with the mash
- Dab the mash with a few bits of butter, then bake in the oven for 30 – 35 minutes or until nicely browned and bubbly
Serves 4
Serve with a leafy green salad. Enjoy!
