javascript:mctmp(0);This is a delicious recipe that I adapted from the Living without Cruelty Cookbook which you can buy at http://www.bcsa.co.za – It has many amazing recipes in it – and no animals were hurt in the making of it…

Ingredients:

  • 1 cup lentils soaked overnight, drained
  • 1 cup re-hydrated soya mince, drained
  • 1 onion diced
  • 3 carrots grated – if you like your carrots less earthy tasting peel them before grating
  • 4 medium potatoes peeled and diced
  • 2tbs butter or margarine
  • 1 tbs soy sauce
  • 1 tsp curry
  • 1 tbs chutney
  • 50ml milk
  • olive oil
  • sea salt and black pepper to taste

Method:

  1. Preheat the oven to 180 degrees Celsius
  2. Boil the potatoes until soft in about 50 ml water
  3. Mash the potatoes together with the milk and butter, add salt to taste
  4. While the potatoes are boiling, lightly saute the onions in a little bit of olive oil – about 5 minutes
  5. Add the re-hydrated soy mince to the onions and cook until they don’t give off any more water
  6. Add the carrots and stir fry for another 5 minutes
  7. Lastly add the lentils, cook for another 5 minutes then add the curry powder, soy sauce, and chutney
  8. Cook a few more minutes and add salt and pepper to taste
  9. Turn the soy mince mixture out into an oven dish and top with the mash
  10. Dab the mash with a few bits of butter, then bake in the oven for 30 – 35 minutes or until nicely browned and bubbly

Serves 4

Serve with a leafy green salad. Enjoy!
