The marinate brings out the taste of the mushrooms and gives it an almost smoky taste – better than the mushrooms you will ever have in any restaurant!

Ingredients

  • 1/2 punnet mushrooms, wiped clean and cut in half
  • 2 tablespoons fruit chutney
  • 2 tablespoons tomato sauce
  • 2 tablespoons worcester sauce or soy sauce
  • 2 tablespoons lemon juice
  • pinch of salt and pepper

Method

  1. Place all the above ingredients into a dish that has a tight fitting lid.
  2. Shake it all together to make sure the mushrooms get nicely coated with all the marinate
  3. Marinate for at least an hour then place the mushrooms in a thick bottomed pan one by one – you don’t want all of the marinade in the pan.
  4. Pan roast it on top of the stove on high heat until the mushrooms are nice and sticky – about 10 minutes

Serves 2

You can use this as a starter or as an accompaniment to any main dish.
