My life was so crazy this last week that I hardly had time to breathe never mind post anything. Note to self: next time you have the crazy idea to start a recipe blog, don’t do it in December! My apologies to those of you who have been eagerly awaiting new recipes. To make up for that, I have two for you today, so here goes recipe No 1.

Ingredients

  • 4 medium baby marrows shredded into narrow strips – I do them with a vegetable peeler
  • 5 spinach leaves – roughly chopped
  • 1 onion diced
  • 5 mushrooms roughly chopped
  • 4 cloves of garlic roughly chopped
  • 250g grated cheddar cheese
  • 2 rounds of feta cheese – cubed
  • 6 large eggs
  • salt and pepper to taste

Method

  1. Preheat the oven to 180 degrees Celcius
  2. Spray a muffin pan with cook and spray to prevent it from sticking
  3. Place half of the shredded baby marrow strips in the muffin pan to serve as the bottom of the mini quiches
  4. Mix all the other ingredients excepting the eggs, salt and pepper together and divide it evenly between the holes in the muffin pan
  5. Whisk the eggs, salt and pepper until properly mixed
  6. Distribute the egg mixture evenly over the muffin holes
  7. Bake for 15 – 20 minutes until puffed up and nicely browned

Serves 4

Serve with a green salad and a creamy garlic dressing.
