This is a delicious recipe that tastes just like the real thing except it uses soy mince. If you don’ want soy mince in it, just omit it from the recipe, it is just as tasty with only the mushrooms. You can get plain soy mince from a health shop or a pharmacy with a health food section. I got mine from Durbell Pharmacy in Cape Gate and the whole pack cost me only about R14.

Ingredients

  • 1/2 dry soy mince
  • 3 cups of boiling water
  • 100g mushrooms roughly chopped
  • 1 onion diced
  • 4 cloves of garlic roughly chopped
  • 1 tin of whole tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon worcester sauce
  • rock salt & pepper to taste
  • chicken spice & paprika to taste
  • Olive oil for frying
  • Chinese noodles for 2

Method

  1. Rehydrate the soy mince in the boiling water for 20 minutes then drain thoroughly
  2. Fry the onions & garlic in 2 tablespoons of olive oil until soft then remove from the pan and save for later
  3. Fry the mushrooms in the same pot until done then remove and save for later
  4. Fry the rehydrated soy mince until a bit browned then remove and save for later
  5. Cook the tomatoes on medium heat until most of the moisture has boiled away, about 20 minutes, add back the onions, mushrooms and soy mince
  6. Add the spices, salt and pepper to taste and cook on low heat for another 20 minutes
  7. In the meantime, in the last 10 minutes of cooking the above, bring 800ml of water to the boil
  8. Add some rock salt to the boiling water, then add the noodles and cook according to the instructions on the packet. It normally takes about 5 minutes or so
  9. Dish the soy mince on top of the noodles to serve

Serves 2

Serve with a nice leafy green salad and some cheese grated on top of the soy mine.

If you don’t have noodles, or don’t like noodles, you can use spaghetti, macaroni or any other kind of pasta for this dish. I have taken a liking to Chinese noodles these days so tend to prefer the noodles to pasta but it’s up to you.
