This is the first official vegetarian recipe in my quest to post 365 vegetarian recipes that I have either concocted myself, or have adapted it from a pre-existing recipe. This recipe leaves you feeling full and satisfied and is a great way to relax after a hard days work. Pour yourself a glass of wine and enjoy!

The recipe consists of oven roasted potato & butter nut squash, mushroom sauce, stir fried greens with a side salad.

Oven Fried Potato & Butter nut

  • 1 Smallish Butter nut cut in half length-wise
  • 2 Potatoes
  • 1 pinch dried Rosemary
  • 1 pinch real Sea Salt
  • tablespoon Olive Oil
  • 3 cloves Garlic – roughly chopped

Directions

  1. Preheat the oven to 180 degrees Celcius
  2. Place the butter nut cut side facing up as well as the potatoes in a roasting pan
  3. Sprinkle the garlic, salt and herbs over it all
  4. Drizzle the olive oil over everything
  5. Roast in the oven until properly cooked – normally about 45 minutes to an hour

Turn it out onto dinner plates and serve it with mushroom sauce, pan roasted green veggies and a side salad.
