Oven Roasted Tomato Salad
by adminThis is a lovely salad to eat on its own as a main meal with crispy bread or to compliment another main meal. Ingredients
- 10 cherry tomatoes – if you don’t have cherry tomatoes you can use normal tomatoes cut in half
- 1 onion roughly chopped
- 4 cloves of garlic roughly chopped
- 1 sprig of rosemary fresh, or 1 teaspoon dried
- rock sea salt
- olive oil
- white balsamic vinegar
- medium soya sauce
Method
- Heat the oven to 220 degrees Celcius
- Place all the ingredients in a roasting pan (excepting the vinegar and soy sauce) and sprinkle with rock salt and drizzle some olive oil over it all
- Roast in the oven for 20 – 30 minutes until everything is slightly charred
- Remove from the oven and drizzle some balsamic vinegar over it as well as some soy sauce
Serves 2 This salad can be eaten hot or cold. Add some feta cheese for a bit of pizzaz.
