This is a lovely salad to eat on its own as a main meal with crispy bread or to compliment another main meal. Ingredients

  • 10 cherry tomatoes – if you don’t have cherry tomatoes you can use normal tomatoes cut in half
  • 1 onion roughly chopped
  • 4 cloves of garlic roughly chopped
  • 1 sprig of rosemary fresh, or 1 teaspoon dried
  • rock sea salt
  • olive oil
  • white balsamic vinegar
  • medium soya sauce

Method

  1. Heat the oven to 220 degrees Celcius
  2. Place all the ingredients in a roasting pan (excepting the vinegar and soy sauce) and sprinkle with rock salt and drizzle some olive oil over it all
  3. Roast in the oven for 20 – 30 minutes until everything is slightly charred
  4. Remove from the oven and drizzle some balsamic vinegar over it as well as some soy sauce

Serves 2 This salad can be eaten hot or cold. Add some feta cheese for a bit of pizzaz.
