The perfect summer salad for hot days. Even though the ingredients in this salad is roasted in the oven first, it is a tasty and refreshing salad that will keep you coming back for more!

Ingredients:

  • 12 cherry tomatoes – if you don’t have cherry tomatoes, just use 4 smallish tomatoes cut into 4 wedges
  • 1 onion cut into 4 quarters
  • 1 red pepper roughly chopped
  • 4 cloves of garlic roughly chopped
  • juice of 1/2 lemon
  • 2 rounds of feta cheese diced
  • 2 paninis or other bread broken into rough chunks
  • olive oil
  • rosemary – fresh or dried
  • sea salt and black pepper

Method:

  1. Preheat the oven to 220
  2. Place the chunks of bread in an oven pan and drizzle it generously with olive oil, roast for about 20 minutes turning it every 5 minutes or so, until it is nicely browned then remove from the oven and leave to cool
  3. Place the tomatoes, onions and red pepper in an oven pan – you can re-use the one that you used for the bread
  4. Sprinkle the garlic, rosemary, salt and pepper over the vegetables, then drizzle with olive oil
  5. Sprinkle with the lemon juice
  6. Roast in the oven for about 20 minutes or until the tips are slightly charred
  7. 5 minutes before it is done, put the feta cheese in the oven pan to roast with the vegetables
  8. Remove from the oven when done, then immediately place the bread in with the salad and give it a stir
  9. Serve immediately

Serves 2

For added flavour, make a salad dressing of 25 ml balsamic vinegar,  50 ml olive oil and 1 teaspoon light soy sauce and drizzle over the salad just before eating.
