This is a fantastic tasting dish that is perfect as a snack or as a main dish.

Ingredients:

  • 1 Large Brinjal cut into 1cm thick rings
  • 1 large onion cut into rings
  • 2 carrots peeled and cut into 2cm long sticks
  • 1 yellow pepper cored and cut into chunky strips
  • 4 brown mushrooms cut into thick strips
  • 4 cloves garlic coarsely chopped
  • 4 tortillas
  • juice of 1/2 lemon
  • olive oil
  • fresh or dried rosemary
  • sea salt and black pepper to taste

Method:

  1. Preheat the oven to 220 degrees Celsius
  2. Place all the vegetables in an oven pan, sprinkle the garlic, rosemary and season over the vegetables and finish with a good drizzle of olive oil
  3. Roast in the oven for about 20 minutes or until the vegetables are soft and slightly charred
  4. Divide evenly between the tortillas, roll them up like you would a pancake, then cut each tortilla diagonally in two

Serves 2

Serve with this easy to make sweet and sour sauce.
