This is a fantastic tasting dish that is perfect as a snack or as a main dish.
Ingredients:
- 1 Large Brinjal cut into 1cm thick rings
- 1 large onion cut into rings
- 2 carrots peeled and cut into 2cm long sticks
- 1 yellow pepper cored and cut into chunky strips
- 4 brown mushrooms cut into thick strips
- 4 cloves garlic coarsely chopped
- 4 tortillas
- juice of 1/2 lemon
- olive oil
- fresh or dried rosemary
- sea salt and black pepper to taste
Method:
- Preheat the oven to 220 degrees Celsius
- Place all the vegetables in an oven pan, sprinkle the garlic, rosemary and season over the vegetables and finish with a good drizzle of olive oil
- Roast in the oven for about 20 minutes or until the vegetables are soft and slightly charred
- Divide evenly between the tortillas, roll them up like you would a pancake, then cut each tortilla diagonally in two
Serves 2
Serve with this easy to make sweet and sour sauce.
