Tomato and Feta Tart
by adminThis is a really easy dish for lazy days when it is hot and you don’t want to spend too much time cooking in front of the stove, and it is really tasty!
Ingredients
- 1 Roll Puff Pastry defrosted
- 1 punnet cherry tomatoes halved
- 1 red onion cut into rings – use white if you don’t have red onion
- 2 rings feta cheese cubed
- 4 garlic cloves
- 10 black olives, pitted and roughly diced
- balsamic vinegar
- olive oil
- fresh rosemary, thyme and basil – use dried if you don’t have fresh
- rock salt and black pepper to taste
Method
- Preheat the oven to 200 degrees Celsius
- While waiting for the oven to warm up, cook the onions in a bit of olive oil until they are nice and soft 5 – 7 minutes, then add about 2 tablespoons of balsamic vinegar to it and let it boil away
- Spray an oven pan with Spray and Cook or grease it with butter so it won’t stick, then lay the puff pastry out on the pan
- Spoon the onions onto the pastry, making sure that you leave about 2cm around the rim of the pastry empty
- Scatter the tomatoes, feta cheese and olives over the onions, as well as a good drizzle of olive oil
- Sprinkle the garlic, herbs and salt and pepper over everything and bake in the oven for 20 -30 minutes until the pastry is cooked and golden brown
Serves 2
Serve with a dressing made with balsamic vinegar, soy sauce, and olive oil, as well as a nice freshly made salad.
