Who says vegetarian’s can’t have braais? Vegetarians have many options when it comes to what one can put on a braai (or barbecue as it is called elsewhere)?

1. Brinjal Steaks

This is a lovely braai idea that I got from the Beauty without Cruelty cookbook.

Brinjal

Ingredients:

  • 1 Large Brinjal cut into “steaks” – to cut it into steaks slice it down the length of the brinjal so that the slices are elongated instead of round. You need to cut it into about 1cm thick slices
  • 2 cloves of garlic crushed
  • juice of half a lemon
  • olive oil
  • rock salt

Method

  1. First of all, sprinkle the brinjal slices with fine salt on both sides and let it sit for about 20 minutes to get rid of the water in it
  2. Mix the garlic, lemon juice, rock salt, and a good drizzle of olive oil
  3. Pour the mix over the brinjal steaks and marinate for at least an hour
  4. You can actually prepare these steaks the day before and leave it to marinate overnight – it develops amazing taste
  5. Keep the marinating sauce to drizzle over the steaks when they are done
  6. Once the fire is ready, braai it over the coals until it is nicely done – turn it over every now and again – cooking takes plus minus 10 minutes

Serves 2

2. Braaied Giant Mushrooms

Ingredients

  • 4 Giant Mushrooms
  • 200g butter or Flora margarine
  • 4 cloves of garlic crushed
  • fresh parsley

Method

  1. Remove the stem from the mushrooms
  2. Mix the garlic into the butter or margarine. You can mash the mushroom stems in here too if you wish
  3. Divide the garlic butter evenly between the mushrooms
  4. Braai over the coals until the butter is properly melted and the mushrooms are done – normally about 15 minutes

Serves 2

3.  Marinated Red  & Yellow Peppers

  • 4 Yellow or Red Peppers, cut into quarters, insides removed
  • Marinate for a few hours in lemon juice, 3 cloves of garlic crushed, rock salt and olive oil
  • Braai over hot coals until nice and blistery.

Serves 2

You can make all of the above dishes at the same time or make them separately on different occasions.

Serve it hot with roasted tomato salad and crusty bread. Warm the bread over the coals for a bit before serving.

These are amazingly satisfying and hearty meals. Use your imagination when it comes to putting things on a braai – be adventurous!
